I knew you could with engineered, but wasn't sure on the other. What's the best glue to use, and I'll assume that it's troweled on? Anybody have a good link for instructions? Open time for glue, rolling it, etc? Must be some pretty sticky glue.

Bruce makes some pretty good notch trowel glue, but damn, it is nearly $150 for a 4 gallon bucket. Mohawk also makes some good stuff but it is $190 for 4 gallons.

First off that slab better be perfectly flat. Then your going to have gaps with some crooked wood, lots of waste verses engineered (which is why engineered was designed for). Bowed planks will need to be weighted down so they dont pull the floor up off the glue.
The adhesive I use the most is sikabond T-21 with a 1/4 x 1/4 V notch trowel. Or Bostik Ultra set - single step. Slab should be profiled with a grinder if shiny - http://shotblastinc.com/industry-guidelines/

And you better have quite a few of these straps. http://www.strapclamps.net/

Adhesives used for these types of installations do not come by cheaply. Better opt for multiuse adhesives that offer both moisture protection and adhesive. :)
