Wolff tools makes a tool for doing this called a FasTrimmer. They also make a sister tool for putting a "factory" bevel back on the top if you need to do so for example if you were doing a design with a beveled product where a cut edge would need to meet a factory edge. They are a bit expensive, but they are a really well made tool. They are more widely used overseas more than here, especially the top-beveler. I've seen guys use a tiny block plane but this tool helps make a bevel at a consistent angle.
That back cutter works really well when you get a product with a burr along the bottom edge of glue down planks from the mill. I know that shouldn't be installations job to correct a quality issue like that in the field but the reality is it sometimes has to be done to maintain a schedule vs. waiting on material to remade.
