How to remove thinset off a wood subfloor . I removed tiles today and looking to lay new bamboo , but the subfloor is in no condition to take new material . Any ideas ?

The cheapest way would be with a hammer and chisel. Otherwise, rent a floor grinder or something like that.

A grinder does work with the right disc.

(Or if the bamboo is a floater you could just skimcoat it flat with more thinset.

I would just throw some 1/4" Luan over it unless its thick which it shouldn't be if its thin set

I've never seen smooth thinset mortar residue.
