Which real wood plank (treatments and type of installation) for kitchen and bathroom?

Hello, I would like to install a plank in a single room in which will be the kitchen and a bath. I would like this to be real wood with an orange / dark tint with quite marked blades from each other. Some examples :

What type of wood would you recommend? I had heard that we needed wood that was resistant to water but also that was very hard. I prefer the rendering of satin varnish to that of oil. I'm not a big fan of boat seals. Are there no boat seals with a brown color? Thanks for your help !

The old adage is, "Water ad Wood don't mix" Bathrooms are to wet and undergo large swings in humidity and temp. I can't suggest one.
 
Back when the Navy called boot camp break time “smoke and coke”

most people just stop the hardwood at the bathrooms even when hardwood is throughout the whole house.
