Better get a qualified flooring inspector out there. Could be so many things if I looked at it there are lots of questions and field tests to perform.
 
This wasn't a locking mech type LVT Only glue

There's quite a few reasons the gaps occur. Most common would be TEMPERATURE related expansion and contractions. That's associated with the 2nd most likely cause and that would be the adhesive BOND.

These plastic floors expand and contract. If you glued down to a surface that is expanding and contracting with temperature........not hard to see why there would be gaps. If the substrate is solid and doesn't move then you figure the tiles/planks are shrinking. Either the glue isn't strong enough, the surface isn't strong enough or they let the glue flash off too long--------AND/OR didn't use a 100 lbs roller effectively to ensure that firm bond.

Ernesto is right that there's just too many potential issues to list with any confidence absent a field inspection.

There are three basic adhesives we use with LVT. One is a pressure sensitive. Installers tend to allow this too much set-up and fail to roll it thoroughly. Besides that it's a somewhat "releasable" installation which means the glue holds the material down but does allow some movement (shrinking and expanding)

Urethane and acrylic adhesive are installed WET. Those bond much stronger and will greatly improve your chances of avoiding any shrinking issues. But even those installations can suffer from direct sunlight, drastic extreme temperature change or FAILURE to acclimate the goods.
